Get your apron and cook this quick, easy and tasty gluten free, spiral pasta salad.  If you’re not avoiding wheat & gluten simply swap the gluten free for regular spiral pasta. Enjoy.

Serves:

4 Large portions:

You’ll need:

Pasta pan or large saucepan
1 Small saucepan
1 Large mixing bowlFork
Sharp chopping knife

Ingredients:

200g of Doves Farm or Salute gluten free Fusilli spiral pasta (if you’re not allergic to wheat or gluten then use your regular dried Durum wheat Fusilli spiral pasta)1tbsp of virgin olive oil
2 Medium sized eggs
1 Small red onion
1 Small (80g) tin of tuna steak in olive oil (or brine or spring water)
½ Stick of celery.
4 tbsp of your preferred style of mayonnaise
Seasoning (salt & pepper)

Prep:

To remove any dishwasher or cupboard odours, give the large bowl, pasta pan or saucepan a quick rinse in hot water – no soap.
Fill & boil the kettle with freshly drawn water.
Chop the celery stick into small chunks.
Finely chop the onion.
Open and drain the tinned tuna.

Method:  

Hard boiling the eggs:

Put the two medium sized eggs into the small saucepan and add the cold water until they are covered.
Bring to a bubbling boil over medium to high heat.Turn off the heat, do not drain, put the lid on the saucepan and let eggs slow cook for ten minutes.
Allow the eggs cool and remove the shells.

Cooking the pasta:

While the eggs are cooking add the gluten free Fusilli pasta to the pasta pan (or to the large saucepan) and the tbsp of olive oil.Now cover the pasta with the freshly boiled water and keep it at a gently bubbling boil for 10 minutes.
Remove one spiral of pasta and taste for your preferred bite quality.  If too al dente for your palate continue to boil and taste until done.

Making the pasta salad:

Put the peeled hard boiled eggs into the large mixing bowl and crumble with a fork.
Add the chopped onion, celery and the drained tuna.
Now add the cooked pasta and 4tbsp of mayonnaise and mix together with a fork.
Season with salt and pepper to taste!

Serve as a lunchtime snack or as part of a wider salad.  Enjoy.
