Tasted: Artisan Grains Country Veg and Cashew Nut Roast

A great value, easy to cook nut roast. Makes a smashing roast dinner.
Nut roasts are something of a stereotype in the world of veggie cuisine but a good nut roast is not something to be sneered at. There no end to the nut and vegetable combinations that can be used and they provide a good source of protein as part of a roast dinner. Cold left over nut roast can also make a great sandwich filling. The downside is that depending on what ingredients you use they can be quite expensive to make and also quite time consuming with all the chopping they entail.
This nut roast was a nice surprise. It’s great value for money and very easy to cook. You just add water, stir and then bake it in the container that the dry ingredients come in. It really couldn’t be easier. Creamy cashews and peanuts are the nuts used with a good mixture of different vegetables and herbs to add further flavour. The texture was good and it sliced well without crumbling. This is definitely something I’ll be buying again as a store cupboard convenience staple.
