Bling up your veggie canapes with these tasty black pearls with a tang of the sea.

The Product:
Jens Moller was showing his children how seaweed could be used to capture enzymes, when the experiment went wrong and small beads dropped out instead of turning the colour of the water from green to red. A couple of weeks later Jens Møller looked at the “accident” and realized that the beads could be mistaken for caviar.  This happy accident has gone on to win the Most innovative Product at the PETA Vegan Food Awards 2014.

The Verdict:
These tiny black pearls have a moreish salty flavour with a tang of the sea. They make for a fantastic addition to the range of veggie canapes. I loved it on caraway rye crackers and it would be great on mini blinis accompanied with a glass of fizz. The product is not just for vegans either, as their website shows the product is being used by chefs worldwide who use it as a garnish even in fish dishes.

Ingredients: Seaweed extract (83 % ), water, salt, spices, Xanthan gum stabilizer, preservative: natriumbezoat, potassium sorbate, antioxidant, citric acid, dye, veg carbon.
