Tasted: Zest Vegan Basil Pesto
By Vegan Caroline
This is a great store cupboard staple with a full taste and multitude of uses.
Pesto is a sauce which originates from the Genoa region in Italy. It’s traditionally made from pinenuts, garlic, basil, olive oil and hard cheese such as parmesan. It’s quite difficult to find a vegan friendly pesto although there’s lots of recipes around to make your own adding cashews for creaminess and nutritional yeast for the cheesy taste. Zest Pesto is a great discovery as there’s nothing that can beat the convenience of jarred pesto for a quick and easy meal.
I was impressed with the taste and texture of the pesto and thought it compared favourably with home made versions. Although there’s no cheese in it the taste is far from bland with the vinegar and chilli giving it a tang that worked well. It’s pretty versatile too. Add it to freshly cooked pasta or roast veggies, spread it on bruschetta or a pizza base or stir a big spoonful into homemade hummus. It was also good to see that it had a shelf life of a couple of weeks after opening.
