Irish soda bread with a cheese & oat twist
30g Flahavan’s Irish Porridge Oats
125g Irish Farmhouse Cheese
325g Plain Flour
250g Stoneground Wholemeal Flour
Generous Pinch of Salt
Rounded tsp bicarbonate of soda
Preheat the oven to 230C or Gas mark 8
Wash your hands & nails in warm water – no soap!
Coarsely grate the cheese. Adrahan & Carrigaline are two Irish farmhouse cheeses that are available in the UK.
With a fine sieve sift 275g plain flour into a good size mixing bowl.
Add the generous pinch of salt.
Add the rounded tsp of bicarbonate of soda.
Stir in the 250g of the wholemeal flour, 25g of the oats, and 75g of the grated cheese.
Make a well in the centre, add 450ml of the buttermilk and mix together until soft and just sticky – if too dry add a little more buttermilk.
Lightly dust the baking sheet with a little of the leftover plain flour.
Add the remaining flour onto a flat surface.
Take the dough mixture from the bowl and knead it on th
e prepared floured surface.
Gently flatten the dough into disc shape around 4cm thick.
Place the dough onto the floured baking sheet and sprinkle the remaining cheese and oats.
Now with large, sharp knife, cut large cross into the top of the loaf – almost all the way through the dough.
Place the baking sheet & dough in the pre-heated oven on the middle shelf for 15mins. Then turn the temperature down to 200C or Gas 6 and bake for further 20-25mins.
To test if cooked tap the base of the loaf, if it sounds hollow – it’s done!
Leave to cool before serving.
