If there’s one food that horseradish adores, it’s beetroot. There’s something about that sweet, earthy veg that tempers the spicy ingredient’s cruelest streak; meanwhile, the horseradish bestows untold zing onto its hearty purple bedfellow. A dab of horseradish butter took this Heston Blumenthal risotto to new heights, and the mixture also works wonders in Tracklements’ superb Beetroot and Horseradish relish.
