Inspiral are an innovative raw food company known for their cafe in Camden, London and their ever increasing range of products that can be bought online or from health food shops. Raw means bascially not cooked or at least not heated above a certain temperature (40–49 °C ). The theory behind raw food diets is that in not cooking food it retains more of it’s nutritional value.
As with all Inspiral desserts this Christmas cake comes in a small glass lidded jar. Although it doesn’t look very big, due to the nature of ingredients the cake is a very rich and a little goes a long way! It’s made from nuts, dried fruits, spices, cocoa butter and coconut cream. The texture reminded me a bit of carrot cake and it’s got an almost truffle-like mouth feel. The rich, creamy raw marzipan layer and coconut, vanilla cream frosting compliment the spicy tangy cakebase making this a good example of something that tastes much more than the sum of it’s parts.
