They take the making of rosé wine very seriously in the South France, especially, from the regions of Provence and the Languedoc. Rosé is NOT there simply to bulk up the winemaker’s portfolio, it is there because it is their most important wine! Not surprisingly then that these two regions make the best quality rosé wine in the World.
The shade of rosé colour will depend on how long the black grapes’ skins and their juice are in contact and at what temperature it is done at. The variety and the thickness of the skin all play a part on how the winemaker balances the extraction of colour and the flavour from the fruit. The best rosé winemakers from the Provence and Languedoc are like three starred Michelin chefs, they consistently achieve that ‘I must have another and another mouthful quality’ that others can’t.
